You really have to talk to the right people who are knowledgeable. I didn’t feel entirely comfortable with Rustica although they ensured my gf pasta was indeed gluten free. Breakfast at Nectar was great. We showed them the gluten allergy card in Spanish and the chef came out to provide me gluten free options and really made me feel safe.

2 Jan 2020 I have talked to 3 staff (they just send you to someone else) and no one can tell me about any GF options at this hotel. Disappointed.

Their breakfast is pretty good. They have a gf section with gf bread! Safe toaster oven too!
Las Palmeras was so so. The bacon on the buffet is layered on top of white bread...to soak up grease? ?. didn't realize that until I had 5 pieces and went back for a couple more. With all of us Celiacs asking for GF it's surprising they would contaminate things when they could just use paper towels. The hotel is nice but Mortons is the only GF option.
The hotel does not specifically have gluten free menus, but the staff went out of their way to feed me safely. They do have gluten free bread, but can run out quickly. Call or email the hotel to make sure it's in stock. Breakfast every morning had fresh eggs in a dedicated pan and they make potatoes fresh of you ask as well. Room service went above and beyond as well.
With that said, none of the other restaurants at hotel (ones on property but not operates by hotel) could feed me safely and was turned away from dining in them.
Make sure you speak to a hotel food and beverage manager and you should have not issued. We were pleased with their efforts.

The hotel is gorgeous and the staff is VERY helpful and really go out of their way to be helpful, but they really don't know what GF means and I had to explain it every time I ordered something. That got to be tedious. But again, VERY friendly helpful staff.
