Celiac here. The staff was very kind to check but they confirmed that no precautions are taken against cross contamination. They have no dedicated fryer and all of their food, even their chips, shares frying oil and prep space with glutinous items. I read another review here that said the chips were fine and like a dummy I ate a few without asking first. I got glutened.

I have been here countless times and they are always very accommodating and have never made a mistake with my order. usually I only ever need to substitute flour tortillas for corn, but there's lots of corn based foods in Mexican cuisine anyhow, so it's generally a safe bet that gives you lots of options. chips are gfree and their salsa is my favorite salsa anywhere.
