We sat down and were handed a small laminated card with a list of gluten-free items (mostly salad things), but the same card listed the NON-GF items which included all the meats. When the waitress brought out the impressive array of chips and salsas, I asked if they were gluten-free. Impatiently, she said, "Not the chips, but the salsa is." "Oh," I thought, "Then, may I have a spoon?" If they don't have a dedicated fryer for chips, I figure they aren't too hip on cross-contamination issues. We left and went to Salsa Brava which was outstanding and properly gluten-free.

Years ago, I helped these guys understand gluten and how to properly handle our food. As a result, they trained their staff at their other stores (within the same franchise ownership) to respect the GF crowd's requests, and I have been able to remain gluten free while dining there. Due to some new faces showing up there, it was back to the drawing board in some respects to re-train, but they still understand and they still do a good job. It's better when they do a lettuce wedge and not a couple of soggy pieces of wimpy lettuce in place of the bun, which is what you sometimes get. Jackie is THE BEST at building a proper GF burger on the wedge!

When you approach the counter, request a "red flag for gluten". The exceptionally friendly employees are happy to do this, and then they notify the cooks in the back so they will change their gloves before preparing your order. They do this every time without fail. I've gotten to know many of the employees just from requesting my food be prepared this way. Also, their fries have a dedicated fryer.

The best thing going for St. Bon's is it's totally gluten-free. It's meant to get those folks out of the house who can't eat out. Food was good, but we waited a very long time for two sandwiches, which turned out to be quite small for $9 a piece, and I can make the same thing at home for about 80% less money. I hope they reconsider their exorbitant prices and small sandwiches; I worry that if they don't, they will have a hard time attracting their target market out of their houses.
