We've eaten here 5 or 6 times now and have never had any cross contamination issues. True, some of the servers have a better knowledge than others about gluten sensitivity/allergy. Make sure you tell your surver that you need an allergy plate. This way, the cooks at the grill will make sure your food is cooked on an extra clean surface separate from everyone else's food with a clean spatula that hasn't touched anyone else's food (mostly noodles from what I've seen). They offer 5 or 6 gluten free sauces ranging from mild to very spicy! If you must have noodles, their pad thai noodles are gluten free. Ask for white rice to be served with your meal.

GF pizza is good but very pricey. I've tried it twice now. Our server was able to tell us about the steps they take to prevent cross contamination with wheat. Unfortunately, the second time I had their GF pizza, there was a bit of cross contamination.

There are so many unknowledgeable restaurant staff out there when it comes to gluten free, but not at Uncle Maddio's Pizza. I was so impressed! Staff were very knowledgeable and explained to us every step they take to prevent cross-contamination with wheat. They are very thorough. The pizza was completely gluten free. Will definitely go back.
