Was able to talk to the chefs and employees, mostly everything is gluten free, and celiac safe. Including the pho! The pho is just broth and the flavor comes from the chicken and jalapeños, etc. the lemon garlic shrimp is also fully gf along with other things, but that would be my personal recommendation! Their juices are also fantastic!

The staff was surprisingly knowledgeable -- When I said "celiac" the young lady knew that meant gluten-free. I am hesitant to declare a restaurant safe after only one visit, but neither my wife nor daughter (both celiac) had a reaction.
They each had pho (chicken and beef, sans meatballs which contain gluten) as well as several types of spring rolls.
Note that some items (especially those that use soy sauce) are not gluten-free but there are plenty of options.
Not relevant to celiac but the food was very good and plentiful, albeit a little more pricey than my old self would like. My son and I (not celiac) have eaten there several times previously and enjoyed it.
