The staff weren’t super knowledgeable, but the restaurant itself is almost entirely gluten free, as stated on their website. They do carry flour tortillas and their Baja fish contains gluten. But I had delicious carnitas tacos on corn tortillas with several fixins and no symptoms.
Went there a few months ago to get dinner. I observed the employee that assembled the woman's order in front of me. She ordered some kind of wrap because she grabbed a flour tortilla. As she went down the line, she requested rice on it. However, instead of the employee using the ladle that was already in the rice, she proceed to go in with gloved hands that had touched the flour tortilla, to grab the rice instead. I immediately walked out and left. If you have Celiac (which I do), I would not risk it. Too much cross-contamination.

They're great about getting toppings from underneath and changing gloves. Sad to no longer enjoy the fried fish tacos but love that I can still eat here-its cheap, quick and an easy place to dine with others.

This particular location of Blue Coast is great about gluten free. This location (and as far as I know, only this location) even has a dedicated fryer for gluten-free chips. They will pull what you want from underneath the counter rather than risking the regular line if you specify gluten-free. They also change gloves and everything. I always ask for mine in a to-go box so I don’t risk commonly used plates and such. But I will say some people at this location even start switching gloves when they see me walk in the door 😂

I eat there so often and never have an issue. I know it used to be not as safe, but managers changed and now I never have a problem. They change gloves, wash hands, get new utensils, make sure those utensils don’t touch the other ones, etc. Honestly they’re pretty much the only place in cookeville that I 100% trust other than P Dilly’s. Even the newer people will go find someone to ask if I tell them I have a gluten allergy (which I say even though I’m celiac).
