I notified them when we put our names on the list that I was celiac and they were very meticulous. Some of the items listed on the menu need to be modified to be gluten free so you do need to tell them. For example, their barbecue sauce has gluten and their bacon has a smoke flavoring that has gluten, so these were left off the brisket nachos. They were delicious without it anyway. The staff was super careful and the manager double checked everything. They also provided me with an ingredient list and modification list for all items on the menu on top of the regular menu. The food was amazing with lots of choices. I had the nachos as an appetizer. For the meal I ordered the chicken salad sandwich on a gluten free bun with baked apples. I'm super sensitive and happy to report that I did not get sick!
