Well, I spoke to the owner and cook. Unfortunately they do not use separat pans and cooking materials. They think by washing pans very hot gluten will be “killed”.

Excellent food! All items on the menu have allergens (soy, milk, gluten, crustaceans, fish) listed. I was able to have the fish in Cataplana. This dish contains soy sauce so it isn't typically gluten free. They use gluten free soy sauce at Don Sebastian. My husband, who is not gluten free, and I ate there twice and everything we tried was delicious. He's not gluten free.

They don’t have a separate menu, but indicate on their menu items that contain gluten (and other allergens). I ordered the tomato soup (which said GF), however it was served with bread crumbs there were NOT GF. When I mentioned this, they brought me a new bowl. That being said, food was delicious- service a bit slow though
