GF items are marked in their menu boards, including their primary offering, street tacos. Less confident on their ability to avoid cross contamination based on my discussion with them but they seemed able to accommodate.

Most tacos come with corn tortillas, queso is gf, and many options are labeled as gf! The staff knows what is and isn’t gf. There’s an entire vegan menu and the vegetarian taco options are great. This is a great option for vegan/gf individuals that struggle to find something good to eat.

I had low expectations in terms of gf options, but had to come here in a pinch and was pleasantly surprised given the 2017 review. Their menu clearly stated gluten free options, and when I expressed concern the staff was quick to head to the kitchen and confirm. A lot of the usual suspects aren’t safe, rice, corn, etc. But their tacos and quesadillas were gf! The tacos were a bit dry / underwhelming but the birria quesadillas were amazing.
They also have an entire vegan menu as well to offer dairy free options.

Outfitted with an array of Luchador (Mexican wrestler) masks, El Jefe offers an array of "street style" Mexican foods. Many of these foods are made with flour tortillas. However, the menu does prominently state their white corn tortilla chips are gluten-free. Of course your not at a restaurant to eat chips, you want the Nacho Libre dish. When I tested this concoction with my Nima gluten device, I found it to be contaminated with low levels of gluten. I find the advertising of gluten free chips to be misleading, hence the low rating in my review.
