tl;dr:
Fairview: Not a ton of options at lunchtime
Alpine Social: Some options for dinner or happy hour if you substitute, but the fryer isn’t GF
Walliser Stube: GF fondue and other dinner options
Louiza: Can do GF breakfast
I didn’t get sick from any of them.
Ate at several restaurants here as a celiac. Lots of options and just ask for modifications and they can make something for you. Breakfast buffet delicious and asked for GF toast and they brought toast and muffin. Yummy fruit with chia pudding eggs, bacon, potatoes, etc. felt great the whole time!

The staff at all restaurants here are amazing! The resort takes Celiac disease very serious, so seriously that all staff must do a course on it. Anything ordered GF is cooked in there own dedicated area of the kitchen. Our daughter is Coeliac and she got to enjoy everything we did.

Excellent food and atmosphere, service is wonderful!
Went to their brunch buffet. Our server told me to pick whatever I wanted from the buffet and the chef would make it gluten-free for me! It was fantastic! I had to wait a little while for my food and they apologized for that but I told them I was happy to wait for safe food. It was worth it. I couldn't finish everything and they offered me a box to take the remainder to go. That was nice not to waste it

This place is not only awesome to be at, but the food was really good. They have gf buns that are made here and they are better than any regular bread I’ve eaten. Definitely 5star meal and service
visiting from Australia, I booked afternoon tea at the Fairmont with high expectations but was a little bit underwelmed!! Had previously sent email before I booked to make sure they could provide GF. Answer was certainly. Was very disappointed with what was served to me. The "scone" was like a little very hard biscuit that was extremely hard to cut to put on the jam & cream. The finger sandwiches were very ordinary. But the view out the window more than made up for it. I have made GF scones myself and they are no different to ordinary scones so my husband and myself were quite amused.
This was the best hotel and dining experience I have ever had! The staff was absolutely incredible. Completely capable of handling diet restrictions of all kinds, they didn't skip a beat when I told them I had celiac. In the gold lounge, gf snacks and breakfast alternatives were made available each day. At the Poppy Brasserie, the manager double checked my order and brought it to me himself to reassure me that it was correct. The food itself was delicious. No complaints here...well, except that I couldn't stay forever. 😄

This deli is located inside the Fairmont Lake Louise hotel, and is a great option if you don't want to wait for a table in the other restaurants. There are GF sandwiches available (which are quite good) as well as salads, fruit, vegetables. We also tried the GF key lime tart, which was very good!
