Fantastic and knowledgeable service, and very willing to help you out with anything you need. They have a book with a list of all ingredients you can ask for, and they'll even come to the bar with you and help you if you need it! Make sure to put the white stick in your meal before putting it on the counter so they know not to add soy sauce or cook it with other peoples food on the grill. Everything is delicious! Even had gluten free soy sauce in the back they brought me :) will definitely be back!
Staff was very knowledgeable and accommodating. You just have to watch out around gluten-items on the bar, when people pick up the gluten-items they sometimes fall into other items around them. I had no issues! The sauces were clearly marked and everything was delicious!

Filthy, Filthy, Filthy! There is no concern, whatsoever, about cross-contamination from the staff. Noodles and rice, sauces, sticks, various accoutrements, and spoons/ladels are strewn about willy-nilly in every section of the bar and in the cooler with the "fresh" ingredients. I definitely would not recommend this to a Celiac sufferer, nor would I imagine Rick Bayless would allow these safety hazards to exist.
Be careful and watch your meal be made. They keep sauces in individual bottles so less chance of CC, make sure to ask the server for unmarinated meat from thr back - meats are pre marinated. also watch them prep your food. I was told by the manager the staff goes 'bread happy' and automatically lay over all meals. Manager tried to serve me my dinner while removing bread. Had to educater her it doesn't work that way
This place was great!!! The food was amazing, and the staff went above and beyond to answer any questions I had. It wasn't clearly marked which noodles were GF but after asking they brought me a separate chart of what was safe. There is a TON of cross contamination on the food line, but they were more than willing to bring fresh stuff out to me! I would recommend this place just be cautious of CC.
Wonderful...really fantastic. They are allergen-friendly, which is a rarity when it comes to chain restaurants. I eat low-FODMAP (which includes avoiding gluten), so I have to avoid certain veggies, spices, and fruits getting in my food. Because I can choose my own ingredients and also request it is all cooked up in a separate wok, I am happy to report that I have *never* had any horrible side effects from eating there. And....the food is delicious!! :) HIGHLY recommended. :)
I'm really sensitive- never had a problem as long as I stick to the simple, labeled gf sauces. I also don't take anything that sits near a vegan protein to avoid cross contamination. They also will cook your food in a separate from the rest if you add a blue stick to your meal. Highly recommended for sensitive celiacs!
I always ask for my food to be prepared in a wok to prevent contamination but still seem to get sick after eating at Flat Top.
You get to personally place everything you want in your bowl before it is cooked, and the gluten free sauces are labelled. Knowledgeable and helpful staff are available to answer questions and get fresh items from the back if anything is questionable. You can place a white stick in your bowl to have the chefs cook your dish in a separate, clean wok, although this can add some extra time if there are multiple allergy orders.
I asked a server if they had a gluten free sheet and the girl handed me a full packet of what I could and could not eat. Perfect for me since I am just getting used to it!
