The cafe is small but cozy. They have expanded their business into our public library down the street from their main area. 3 Birds was Gypsy Java before. I went to this cafe do to the great codfe taste and the separation of gluten-free items. Unfortunately, I no longer go there. A recent video had shown that the gluten-free items were mixed with the gluten items in bakery. I was informed that they aren't a certified gluten-free kitchen. If anyone has celiac or is gluten-free, advised to go with caution. They did mention that they place the gluten-free items on the top shelves to minimize the risk. However, it is still in the same area. I miss their coffee however won't risk getting sick. I apologize if I offend anyone from this review.

Delicious breakfast and coffee. I got thr Morning Mash on a bed of greens. They do have gluten free toast if you prefer.

I love these guys. May not be great for celiac as the same toaster is used. I eat here regularly. Never get sick. Great staff and amazing food!

I was told they couldn't accommodate celiac, and when I went to order a drink I noticed they used the same container to steam my regular milk as they did for the person before me with Oat milk. After looking at the ingredients of the oat milk, it wasn't noted that the oat milk was GF or made from certified GF oats, so I ended up not being able to have a hot drink there either.

Gypsy Java is one of my favorite gluten free choices in Pueblo. They have gf bread and can make many sandwiches gf. They have the BEST gf treats you will find in town. My favorite is mixed berry scones, chocolate oat bars, and oatmeal cream pies. The baked goods vary day by day but there’s always good choices! Coffee drinks are also delicious! Staff are super friendly and helpful!
