Cooks had ample knowledge of gluten allergy/Celiac disease. They clean the grill with a cleaner and a pumice stone tool that scrapes all the junk off. He was very nice and willing to help you out. Then they use separate utensils that stay with your food the whole time it's cooking. Other dishes don't touch yours. I felt satisfied and not sick when I left!
