I went when it wasn't busy and told the staff that I was celiac and that I had to be extremely careful. They were fantastic - almost Jason's Deli careful. Used dedicated prep area and knives. I'm never 100% confident, but I felt safe. The sandwich was great and I didn't have a reaction. Let them know about your condition and they'll take care of you. But I'd still try to go when it isn't busy.
We ordered four sandwiches, one GF. We received three in white paper and one in brown, no other labeling. My Celiac daughter ate several bites of her sandwich in brown wrapping before I realized it was regular bread. I went up to the counter to ask about labeling, and the manager said they don’t label but they would talk to corporate about that??!!
