Was lucky enough to lounge for a few days at Ace, and prior to my arrival I emailed the hotel asking about gluten free options. Billy Deaver, the chef, quickly responded and assured me the staff would be helpful and the menu had options. I was able to safely have five meals there, and the staff was very patient and willing to seek out answers. Many items on the menu can be easily modified. One server, Sarah, was very patient and even thanked me mentioning that it was helpful information! Another server, Shannon, found out the cornstarch brand for me so I could figure out if I could eat the hash browns. Really, really appreciated all of their assistance! The hash browns are safe, as they currently use Argo corn starch; while their fries are not because empanadas also go in the same fryer. Billy, the chef, followed up to make sure my experience there was going well. Overall, very impressed!
