They just wipe down their normal crepe cooking surface in order to cook thier gluten free. If you are celiac I wouldn't recommend but if you don't mind minimal cross contamination you should be fine.
Magdalena's is in our top favorite restaurants list. They are incredibly knowledgeable about the ingredients that go into their crepes. It is evident that the ingredients are always very fresh. All of their crepes can been done with buckwheat batter to make them gluten free. Most of their crepes can also be soy and dairy free upon request. On a side note - their coffee bar types of drinks are spectacular! I don't like coffee, so I order white hot chocolate, but my husband assures me that their coffee is delicious.
