Mellow Mushroom now has a gluten free menu and the crust is fantastic. You can get one of several speciality pizzas or build your own with gluten-free toppings. There is also an in-depth description on the menu of the type of crust used and their handling practices to ensure there is no cross-contamination i.e. cook changes gloves and apron, special pan is used so crust isn't in contact with stone, and gluten-free ingredients are kept separate from gluten items. The server seemed well-versed in what was required. The restaurant seemed to really take celiac needs seriously.
