Tried to eat here in July 2016. The chips are fried in the same fryer with wheat foods. The server and whoever he spoke with were very confused about what is and what is not safe for celiac customers. I want to like On The Border but they haven't earned it yet. Instead try Matts Rancho Martinez just on the south side of the turnpike (190). Matts is very celiac friendly.
We ate at the one in Garland, TX and they do have a dedicated fryer for the chips and they are one of the best ones I've had at a restaurant. Very thin and crispy.

The kitchen manager, Eduardo, was such a big help. He grilled my onions fresh with oil and no soy sauce for the fajitas and warmed me about the butter in the rice due to my dairy allergy, etc. Such a great experience compared to my usual eating out ordeal of trying to navigate multiple food allergies.
Manager was very friendly and explained all the menu options to me. There is no dedicated fryer so chips we're out, but he was clear that the grill would be cleaned before my food was cooked and that all precautions would be taken to avoid cross contamination. I did not get sick, so I was very pleased, as I almost always get cross-contaminated at Mexican restaurants.
It didn't start great but we left very satisfied with our meal. First, their chips are made in a shared fryer, so no chips if you are celiac/intolerant. That's a bummer. We were given gluten free menus but unfortunately the GF menu was out of date which we only determined after struggling for a while. Our server got the kitchen manager who explained our choices as well as how we could make some modifications which would better suit our young son's preferences. The food was excellent. Would have given 5 stars if the menu was current and safe chip option.
I'm giving 4 out of 5 since the chips are fried in a common fryer. If you can say no to the chips, the food is really good, prices are reasonable, and the staff (that I've encountered) have been very accommodating. We have been to this location a lot (prob, once a month for years), and have had parties catered by them. All of our family experiences here have been fantastic.
We ate here one time and I had stressed the need for gluten free. The waitress began by telling me the chips were gluten free (which I knew was not correct because they're fried in the same oil with gluten containing foods). Then she brought out flour tortillas for my food.... And tried to tell me that the rest of the food was fine and they didn't need to remake it. At which point I insisted they did remake it since the tortillas had been on the plate. Overall they were not knowledgeable of gluten free or celiac. I would not eat here.
I went for lunch and the chef's wife has Celiac. My meal was so fresh and completely GF!! Corn tortillas were microwaved on a clean plate, gloves changed, clean utensils used and fresh sides not contaminated with gluten utensils or hands. Best part was no eye rolls or exaggerated exhalations when I said I needed gluten precautions.
Not at all impressed with this place. When I was unintentionally glutened by the chips (not GF!), the waitress was completely unapologetic. Even after that, she didn't offer a GF menu and told me that most of their menu is not gluten free due to cross contamination. So, cool. I won't be eating there again.
We went in aware we couldn't eat the chips. The waitress said she actually thought they had changed the chips and asked management who agreed they were fine. 20 mins later after we ate the chips someone was sent to let us know the chips had gluten in them. My kids were sick the next day. Don't trust the staff. Trust what you researched before arriving.
The menu/list really sucks. It's got a heading then a list of food. Everything is separated by a comma and not even listed properly so it was very confusing. Most foods weren't really for celiacs but good for those whose bodies can tolerate a little gluten. I'm GF but because of an ingredient that is removed when gluten is removed, so I could eat a lot on their menu.
Had dinner at On the Border last night. Was not to impressed with the gluten free menu. But as I was browsing the main menu, I asked our waiter about the Border Smart Chicken Fajita. He went back and got some answers for me. It came with onions, bell peppers and chicken. My concern was the corn tortillas. He also found out that the corn tortillas were made of only corn and lime. But did state that on the bag they came out of a manufacture company that does work with wheat. I went ahead and ordered the dish. Oh my that was so good and I had no issues with it at all. It also came with a side of black beans with nothing added to them, not even a thickening substance. So thumbs👍 to On the Border. I will be coming back for sure.
My daughter became violently ill after ordering off the gf menu. Of course there was a warning of cross contamination since it is not a dedicated celiac friendly kitchen. However this is the 1st time, ever that we have gone anywhere and had a problem after we let them know she has severe food allergies. I would use extreme caution before eating here.
