The chef’s sister has celiac, so even though the waitstaff was not well educated, the kitchen was. Fryer is GF, bread is quarantined to a separate part of the grill, they understood avoiding cross contamination. Nuts and seeds used as ingredients were not necessarily from gluten-free facilities, so caution there, but the food was creative and delicious and they were incredibly gracious about dealing with celiac food anxiety.
