They have a gluten free dough that can be used for any of their pinsas — aka pizzas. They said they would cook and prepare it separately. The dough is very good!!! Also my pizza came out like 10 minutes after the other two at my table which actually made me feel like they took time to be careful. :)
The pizzas are almost more like a flatbread than a pizza, with most toppings being put on after baking (like arugula, prosciutto, balsamic etc).
They also made common appetizer accommodations, like I had caprese no bread.
Overall a very good experience, I’ll be back!!!
