Tapioca crust. They used separate ingredients that had not been cross-contaminated and they were very careful to avoid cross-contamination. The pizza was very good. The crust seemed to be from the same supplier who supplies most pizzerias with a pre-prepared crust from a gluten-free facility. They also have a cauliflower crust that I am looking forward to trying.
