I’ve been coming here for years and have never gotten sick from cross contamination despite their warnings.
The GF pizza is truly outstanding. It’s a duel between here and Keste for the best pizza I’ve had. Lifetime, not even exclusive to GF days! I love the Borbone pizza (eggplant, spicy salami, ricotta) and the zucchini pie.
At least one time they were out of GF pizza dough and I ended up needing to order an entree and enjoyed it. Would be worth calling ahead to confirm they have it in stock that day.
Relatedly, the service here is…. Not the best. Or at least, it’s not in the vein of that NY quickness. They’re Italian and ignore / forget about you. All part of the experience. Just make sure you allot extra time.

Easily and by far the best gluten free pizza in New York, possibly in the US. I’ve not had better except for when I was in Italy. They do have a warning that they use the same oven on their menu. Worth it to ask if they’re putting down paper to avoid contamination but I can’t comment on safety for celiac disease.

You can have any pizza made Gluten Free and the waitress asked if I was celiac, which I am not. I have a Gluten allergy but not celiac. I’m sure she asked bc they prepare the pizzas in a different area. That being said this was the pizza I have been looking for. It was sauced well, cheese had that pull effect. I ordered my own pepperoni and sausage pie. You could taste the char from the oven on the crust. I’m not in this area that often but when I want a great Gluten Free pizza I will find a reason to be on East 12th street again.

The best pizza I think I have ever had gf or not- and I've had it in Italy, Chicago, etc. I was a lil worried about cc, but so far so good. I also can't do soy or coconut so we called before we went and neither are in their gf crust

Honestly was nervous it wasn’t GF because it was *so* good. Didn’t even ask about cross contamination since I knew that would be a thing (they acknowledged it on their website). Wouldn’t recommend for a super sensitive person though given shared spaces.

Wouldn’t recommend for anyone who can’t have cross contamination. Planned to have GF pizza here today but server said they’re cross contaminated in the pizza oven and they don’t put them on tin foil or anything to prevent, so we had to leave.

If they hadn’t told me it was gluten free when they handed my pizza to me, I wouldn’t have believed them. It was delicious. I ended up not being able to eat the whole thing, so I tore the crust off to finish that when I was getting full. Apparently the gluten-full food is also tasty per my friends. There is a comment on the menu that the kitchen isn’t dedicated gf so cross contamination is possible. (Celiac and haven’t had a reaction)

The pizza is so good it’s hard to believe it’s gluten-free. I’m not celiac but allergic to wheat. I didn’t have a reaction that I noticed but sometimes it’s hard to tell. I still don’t entirely believe it’s gluten-free. If it was, this would be hands-down the best crust everrrrrr.

I just want to start by saying I have not personally eaten here. However, I was alarmed enough by a quote I just read from Ribalta's owner in an October 2020 article that I felt I needed to post it here. This is what the quote said:
“We use a plant-based flour with all-natural ingredients,” explains Ribalta’s Pasquale Cozzolino. “The dough is prepared in a separate kneading machine and then left to rise for about two hours. It doesn’t need to rise any longer than that, because there is no gluten present. Once ready, we keep it separate from the regular dough. When it comes to stretching the dough, we must be very gentle. We can’t slap it to shape it. Also, we don’t use a separate oven and we warn our customers about this. But once the temperature reaches 800°F, the gluten is destroyed – so there is no cross-contamination between the two.”
The last sentence is very alarming--it's completely untrue. Gluten does not "get destroyed" at high temperatures, 800F or no. The fact Ribalta's owner (or whoever it is) thinks the high heat destroys gluten and thus there's no cross-contamination is not good. Just wanted to make celiacs aware of this.

Celiac - ordered sauteed shrimp with cannellini beans (delicious), octopus in tomato stew (delicious but salty), and gluten free pizza (pretty good). I was hoping they would have gluten free pastas but no not available.
I've heard mixed things about the pizza ovens but I didn't get a clear answer. I would assume it's made in the same oven as all the other pizzas.

Came here in 2021 and was slightly worried based on the previous reviews. But I was assured by the waiter they use a separate oven for gluten free crusts. I ate the brigante red pizza and had no issues. I am a celiac and felt like I was taking a risk based on the reviews. However, I feel great after eating here and will definitely be back based on the staff and quality of food.

Very nice restaurant. Upscale pizza joint. They offered gluten free pizza which was very good and tasted just like keste’s pizza. However, they do not cook in a different oven so it is cross contaminated. It is also twice the price of Keste’s house pies

Not celiac but gluten sensitive. Got sick after eating here. All pizzas are cooked in the same wood fire oven which I think is the culprit in terms of cross-contamination. A shame too, it was really good pizza!

This is hands down the best gluten free pizza crust I have ever come across. I actually had to ask the waiter multiple times if it was in fact gluten free and he assured me it was. Based on other reviews on yelp other people have had the same experience. Crust has the airiness and chewiness that you would expect from a glutenous crust. Absolutely delicious, would highly recommended for gluten sensitive folks.
Glad that I didn’t read previous review. Maybe I got lucky. Saw Ribalta ranked #1 on list of top NYC gf pizza spots. Ok pizza with great atmosphere. Reservations are a must.
Ate the gluten free pizza after inquiring about safety for celiac. Waiter assured me I'd be in good hands...10 minutes after eating I knew he was wrong! Sick for 48 hours after consumption- steer clear!!
