I had a good experience at Saka! They offer Gf soy sauce and even took a photo of the wasabi ingredient list to show me so I could confirm it’s GF. I could have most rolls except the usual tempura crunch, imitation crab, etc. They were able to do spicy tuna without the crunch which was delish. I honestly did not ask about cross contamination from cutting boards/knives but overall felt safe.

Saka has options on online ordering to note “gluten free” and I’ve always felt safe. They send gluten free soy sauce with their sushi when noted. I’ve gotten their fried rice as well and it’s very good!
