Vinegar often contains trace amounts of gluten - they openly admit their vinegar likely has some. The vinegar is used in the sushi rice, so that's out of the question if you're celiac (though probably okay if you're just mildly sensitive). The staff is very knowledgeable about what you can in fact eat - sashimi with un-vinegared rice, which is a word I just invented. Can also get some hand rolls. And they go through the special precautions to avoid cross contamination. But having sashimi rice without the sticky properties, seeing other people eating sushi in front of you while you can't, is a bit lacking. So it's unfortunate in that it's a well regarded sushi restaurant, and you can't eat the sushi.

Very Celiac friendly!! Our server checked on all the ingredients in everything we ordered and was very knowledgeable about cross contamination. Had a delicious, worry-free meal. Will definitely be back!

Unbelievable! I came in when they first reopened and had to leave because they didn't have any GF options. I'm sitting here with my son on his birthday and just had the best GF EXPERIENCE/meal in a long time. I'm not kidding and they didn't pay me. I'm actually still here. Their knowledge and efforts to avoid contamination along with marking me as GF is a huge breath of fresh air.

all I needed was the gluten free soy sauce and I was ready to enjoy my sushi choices. great place for a fast lunch (in the sushi bar).
