They have GF soy sauce, you just have to ask. I was told the sushi rice is gluten free. I didn’t try the wasabi, although they didn’t seem to cheap out on ingredients and it was likely fine.

Had ‘all you can eat’ fried rice and sushi rolls.

Sushi & Hibachi All You Can Eat. $26.99 per person. It is ALL made to order, no buffet. Several options available, and they will make modifications to the roll if you ask. Manager said he could make Hibachi gluten free too, but I didn't try that today. They have GF soy sauce. I would say they aren't very knowledgeable, but they took the time to talk to me, and take my requests/suggestions.
