They can make any sandwich into a salad to make it gluten free. They also have gluten free bread, but the chef mentioned there is a risk of cross contamination with the bread. Overall the chef, Patrick, was very knowledgeable and took time to make an amazing salad, and took great precautions in avoiding cross contamination since I have celiac. I am unsure if the other chefs would take such good care when making the food.
