I contacted them to see what their GF procedures were, there’s the response:

“Hi, My name is Desi Govan and I am one of the Chefs with the head office of DJB Hospitality/ Sedona Taphouse. I had received word that were interested in our procedures in eliminating risk of gluten cross contamination in our stores and wanted to get back to you to delve deeper into the policies we have in place to address this. First & foremost, allergies such as yours are always at the forefront of our minds when creating and structuring our recipes & kitchens as we understand the importance of knowing and avoiding the risks of cross contamination and work tirelessly to train on our staff on these points as well. From the moment you arrive, your server/bartender will ask of any allergens. From there, back of the house staff are trained and inspected on washing hands in between tickets, sanitizing all work stations upon receiving an allergen ticket and plating on specific dishes when an allergy is present (i.e: gluten free flatbreads go on our white rectangle plates rather than our normal pizza boards). Here at the head office, we work our recipes around a gluten free fryer to ensure nothing with gluten ever touches the fryer station. We also keep a gluten free area of our grills and pizza ovens to avoid the same risks. We offer gluten free pasta, gluten free flatbread, corn tortillas for tacos & for chips with Guacamole, & gluten free hamburger buns as some bread alternatives to our guests. We are also always researching our products (i.e sauces, dressings, etc.) to ensure no wheat products are present and, if they are unavoidable, we train on our staff on these points so that your server can help assist you in altering your dish to be able to serve you.
