I called ahead to ask about their protocols. She told me that there are none and I risk cross contamination by eating there.

I asked the waitress, she was able to point out the items to stay away from due to a shared frier but all meats and sauces were gluten free. Had ribs green beans and apples. All were very good and no reactions.

Delicious. Ask for their laminated guide of what includes gluten. GF= meat (except sausage), sauces, and many sides (green beans, bbq beans, potato salad, cole slaw). Ate there three times on our trip and no issues.
