I was so excited this was listed as gluten free... it must depend on who is there when you go. They had NO idea what gluten was, but they were kind and let me walk them through it.
The sushi rolls we got, however, were the worst I've ever had (and I've had fast food sushi and grocery store sushi!) We took most of it to go then threw it away when we got home... and that's saying a lot, we aren't picky eaters.

They ARE knowledgable and accommodating, but my wife was glutenized by only eating nigiri and the ONE roll that is listed on the menu as gluten free.

Although their menu doesn't explicitly state what is gluten free and what isn't, they are EXTREMELY accommodating. They basically made me a revised version of whatever roll I wanted.
They can create any roll on the menu gluten free, basically removing sauces and substituting other fish for imitation crab. They made me tempura shrimp with corn meal instead of flour and it was so delicious. Make sure to bring your own Tamari.
