My sister is celiac and I am suspected celiac as of 2020. In 2020 we started ordering on the phone for my family and doing takeout. We asked if they provided gluten free options and, while they were not particularly knowledgeable at the time, they were patient and took the time to work through what would and would not work for someone avoiding gluten.
We made sure (and continue to make sure) they are aware of the risks for someone with celiac disease and they were able to list the items on the menu that are safe. Essentially, any sushi rolls or sashimi that do not have a sauce and have nothing fried tend to be gluten free, but it's always good to check to make sure. Obviously, this does limit the options quite a bit. You're typically going to be left with sashimi and very basic rolls.
However, having ordered from them well over a dozen times in the last two years, we've never had a single issue with gluten and my sister is incredibly sensitive. They thoroughly clean the prep area between orders and package anything asked to be gluten free separately.
Their prices are extremely good for sushi and the quality is still quite good, although they lack some of the flair and variety of larger sushi establishments. Obviously, between the lack of a gluten free menu and limited knowledge on their part it's not the easiest or most straightforward experience. However, if you dine in they do prepare all orders in plain view of the bar. They also seem to really care about your safety and will do everything they can to accommodate.
Overall, if you're willing to put in a little more effort to make sure they understand your needs Sushi Town is a very affordable option for reliable, high quality sushi.
