This is a locally owned chain with restaurants in Tucson, Sierra Vista, and Casa Grande. The hostess and servers were knowledgeable about celiac disease, the gluten free items on the menu, and how food was handled in the kitchen. Although the menu does not indicate gluten free, there are many items that should be safe. Avoid the red enchilada sauce as it is thickened with wheat flour. The green tomatillo Sauce is gluten free. They have a dedicated fryer. I had the beef taquito appetizer. The generous serving was enough for a light meal. I plan to return. As always check with your server about cross-contamination.
