While specifically GF, the carvery service makes it easy to chose GF options.

I specified my needs on arrival and was brought the 'glass onion apps to search. I asked that my food not be from the carvery deck to prevent CC. I was given a form to list my options and it was made in the back and brought out. Gravy was also brought separately. I did have to go to carvery deck for meat. Server washed his hands before serving me but I had to avoid pork as it was right next to the Yorkshire puddings.

Could eat moat of the carvery minus the stuffing and Yorkshires unfortunately. Pork has gluten on the outside but they cut me abut from the centre and i ate it and was fine ( depends on your sensitivity if you wish to that but i am coeliac). Vegetarian gravy is Gf. Had a gf warm chocolate fudge cake with ice cream to finish.

After telling the waitress I had coeliacs I was given a very grubby tablet with a allergen statement they said they can’t guarantee no contamination. The tablet also had a list of what allergens each item contained. Yet the tablet was taken away before going to the buffet , so you have to remember what contains gluten.
However everything bar sausages, Yorkshire pudding and cauliflower cheese were not made with gluten.
Is a buffet though so a risk of contamination.
