I’ve eaten here several times over the past 3 years and never had any issues - the staff is always very helpful in making sure you don’t get anything you can’t have! They have three cooking sauces that are gluten free (the two that start with K, and the miso), the veggies always come out with fresh udon noddles, but if you inform your waiter that you have an allergy, they will make a fresh veggie bowl for you that hasn’t touched the noodles. Ate here again about 3 weeks ago and the waiter mentioned that if you call a few hours ahead, they’ll even make the sesame dipping sauce gluten free. They also have tamari on hand. (In response to the previous reviewers comment - make sure you’re talking to the shabu shabu/hot pot side of the restaurant, not the ramen bar - the ramen bar doesn’t have gf options)

2 of their 5 broths are gluten free ( Kombu and Kabocha). All of their meats/veggies are gluten free. I told them I was Celiac and the chef prepared fresh veggies that hadn't touched the udon noodles. I can't have the dipping sauces, (soy sauce) but he made sesame oil and salt for me, which was really good (if a little plain). The chef asked if I felt okay after the meal and I said I was! He wants to make gluten free dipping sauces in the future, especially because there is supposed to be a meat sauce and veggie sauce. Overall I think it was really good, especially since they opened a month ago.
