UTBT is in the shopping center near the Mauna Lani, and I'd say it's the perfect stop for a vegetarian/vegan GF lunch. They truly get GF needs. The guy who helped us, whom I took to be the owner, was really solicitous (his wife has celiac, so we commiserated about the pervasiveness of soy sauce and what a bummer it is that so many restaurants have a single fryer). He offered several options as substitutes for granola (on K1's pittaya bowl), including almonds and mac nuts. Many choices are inherently GF (e.g., my lunch, the special kabocha squash curry with zucchini and quinoa - good, though a bit spicy), and others are easily GF'able.

Everything is vegetarian, with some vegan entrees as well. The dessert case offered GF banana bread, GF black-bean brownies, and a third option that's slipping my mind right now. Great options for adult celiacs or sophisticated kids; not sure if my K2, a conservative diner, would've found anything he liked other than a smoothie, though.

Sweet little spot with a lending library with materials for all ages, Nitro coffee (mmm!), and a selection of teas and other items for sale. To help you picture it, it's about the size of a Starbucks, with a handful of tables inside and two outside. Self-service water (in Mason jars - cute!) and silverware, self-bus tables. Staff were laid-back but moved fast - our meal was ready in no time at all!
