The people at the counter weren’t sure what a gluten was so proceed at your own risk.
If I could give it no stars I would. Drive out of the way for a friend who wanted Mexican only to find that they say they have NOTHING Gluten Free!!!!

I eat here all the time without issue. They use tongs and spoons for all of their ingredients, plus they don’t tend drag them across the tortillas like they do at Chipotle.
They say on their site to at their only gluten-containing items are their tortillas, brownies, and southwestern ranch.
I not only trust them way more than Chipotle, but think it’s way better overall.

Please note: everything is SUPPOSED to be gluten free per the corporate website aside from the burrito tortillas. We asked to see the ingredients of the flour they use and it is high gluten flour. DO NOT order anything fried here if you have a gluten allergy.

Everything here is GF except for 3 things: chipotle ranch sauce and of course the flour tortillas & brownies! It’s very similar to Chipotle but with more options. Jennifer is the manager there - I know this because they put her name on the front door. If it’s your first time there, she’ll let you taste anything before ordering. (I’ve been there twice already and she was there both times.)

The best description is "upscale chipotle-like".
Communication was difficult at Summerlin location even with fluent Spanish language. The manager understands needs of a celiac, but workers without a clue.
Fortunately I had read the menu ingredients on line before I tried
Zaba & ordered super carefully.
Hopefully was celiac "safe".
