Owner has no interest in providing gluten free options.
Manager was very knowledgeable & helpful in going over my options, the Chef, also knowledgeable, handled my dinner selection in separate cooking surfaces. The wait staff on shift came over to our table politely for a lesson on celiacs, because those girls hadn't had CD customers & all of our concerns. They took notes & asked lots of questions. It was a fairly complicated process but they seemed genuinely interested in good service. its a small chain, so I'm hoping they will design a small GF menu to streamline the whole process.
