My wife has Celiacs and we eat Taco Casa at least once a week. Super Nachos and Regular crunchy tacos with no side effects.

Taco Casa lives up to its name which means Taco House! They are a Mexican fast food joint that serves up tacos, burritos, and nachos. If you are following a gluten free diet, it may seem difficult to find a dish you can eat off their menu, but we looked through the menu for you.
We’ve analyzed the allergen menu and ingredients list and found there are up to 7 gluten free options at Taco Casa, depending on your level of gluten sensitivity.
Popular among these 7 items are the Tostadas (deep fried corn chips, refried beans, mild red sauce, lettuce and cheddar cheese) and the Nachos (deep fried corn chips, cheddar cheese sauce, and jalapeño slices). The tacos (ground beef, lettuce, and shredded cheddar cheese) are also available with a corn tortilla shell which makes them gluten free.
Sides of guacamole and corn chips or frijoles are also available to the gluten free diner. Round your meal out with a refreshing soda or iced coffee.

Per Taco Casa's website (on nutritional menu page, disclaimer at bottom): * Only item that is gluten free are the regular order of Nachos (NOT SUPER NACHOS). If you have gone w/out gluten for a long enough period of time and have Celiac disease or are gluten intolerant, you may not react after consuming gluten. It is through continued consumption that most suffer the consequences - and reactions can vary in type and severity over time. I've learned that the hard way! And have friends that have claimed that 'while in Europe' they didn't react to the gluten in products there, only to also learn that, over time, they also reacted to those products. CD is NOT an allergy; it is an intolerance. An allergic reaction is immediate; there can be a delayed reaction to ingestion of gluten by a Celiac. It's entirely possible to have a gut reaction without a headache or nausea, mouth sores, etc. - but that doesn't mean that gut damage isn't being done.
Taco meat contains gluten (confirmed by management) so that eliminates a lot. I haven’t been able to find a substitute.

The tacos are good and their meat is gluten-free. Their crunchy tacos are gluten-free also.
Not all of their corn tortilla tacos are gluten free. The Super Taco and Tostada are gluten free. Both are very good!
