In order for something to be "Gluten Free" it generally needs to be certified as such and have a dedicated prep area or fryer/cooktop etc. More and more restaurants are taking to using the phrase "Gluten Sensitive" because while the item has no gluten ingredients, they cannot promise there's no cross contamination.
