The owners wife is gf and they are more educated now. They prepare everything separately and even get from new containers. So happy to be able to go here. Since moving here my husband and I have been many times and never gotten sick

They USED to be good about allergies. Last time I was in the middle of ordering when I saw a lady make a shrimp tempura roll (not gf) in the allergy section they usually make the gf rolls and use all of the back stock fillings, contaminating everything. I wouldn’t eat here now

The staff has always been super knowledgeable and conscientious about gluten allergies! I always tell them I have a gluten allergy before I order and they have always taken care of me. I really appreciate that they have a separate cutting board and cutter, use separate ingredients, and use a dedicated kitchen area to prep gluten free rolls to avoid cross contamination. By far one of the safest places to eat gluten free in Tuscaloosa! I highly recommend Ajian! Great sushi and great people!
