What the owner needs to realize is the "picky" people who must follow a gluten-free diet are the people who determine where the dinner party or family will eat. If the establishment does not take care of the gluten-free diner, they get nothing at all. The owner needs to look at the big picture, the check amout of the whole party including drinks and dessert, instead of the added cost and work of accomodating the needs of the gluten-free diner. I would like the owner to post when they have eliminated the up-charge for being gluten-free.
