My wife is the one with celiacs disease. We asked if they could change gloves and do things to avoid cross contamination, and they said they could not. I've seen another reviewer that was disappointed in this, but I appreciated that they were upfront and honest. It was lunch time, and they were very busy while only have two people making food. However, I got my Cuban sandwich on a gluten-free bun, and it was phenomenal! This place is probably best for people who are gluten intolerant or who are not extremely sensitive. They were very kind, so I wish I'd had an opportunity to go back when they weren't as busy
