I love Big Island Sams. I ate here every week until I was diagnosed. I've only been once since diagnosis and I talked with Sam. He mentioned maybe trying some recipes with GF options, but until he does there really aren't too many options. Essentially omelets and one of the ribs (not the kalbi ribs, the other one). A lot of Hawaiian food uses soy sauce as a base. Sam's kalua pork contains oyster sauce.
With the gluten free soy sauce options from Kikkoman and La Choy or the alternate of using tamari soy sauce, I would think Sam could adapt his menu. I really hope he does. His shoyu chicken is great. Maybe he could have a GF day of the week with a couple specials.
The restaurants that have adapted get extra business because not only do I come, but I bring my family. Ones in the area that I think of that have stepped up to the plate, ones that Sam could copy, are Tsunami Sushi, Costa Vida, and Chiku Pan Asian.

My son had the Cornbeef Hash and loved it! They were great to work with GF. Knowledgeable about GF. They said they're working on getting GF soysauce so more can be GF.
The owner Sam is willing to accommodate a Celiac's needs on most of the items on the menu. I have eaten here a couple of times and have never been cross contaminated. The food is really good and come hungry because the serving sizes are huge!! No extra charges for GF 👏🏻👏🏻
