The only info on the menu is a big warning that allergens may be present even where no dangerous ingredient is listed. We asked the server and he sent someone else who knew more. She was helpful, told us that there were only a few options and answered questions. Most rolls come with "crunches" and brown sauce, both contain gluten and we were able to order without them. Salad dressing contains gluten. Spicy tuna is a premix that includes gluten and we weren't sure about the imitation crab. Ordered two simple rolls without crunches or brown sauce, edamame, and had a few bites of Wakame salad. Server brought a bottle of tamari. No symptoms, so it seems to have been safe. Nice place and good food, just limited options and requires a lot of care.
