(update) I really care about texture and their brisket has been chewier for me than I like. I haven't returned for a year now. It was hard to force myself to eat the meat which I normally want. Supposedly I may have been getting a "well done" part without realizing, and it's only one part of eat hunk of meat. I normally ask for the leanest possible, as the bounce feels from unrendered fat. Cooked too fast. Needs to be low and slow(er).
(old) I've gone many times. Not perfect for gluten free but I've never reacted (my foot turns purple and swells up). Get a "dinner" with no Texas Toast, and two of their many listed sides. They list out specific meats too if I'm not aware of one being tainted. Brisket is my favorite. Fryer is shared for breaded Nugget's so avoid. They can answer for other allergies, like 3 of their sauces have gluten free soy. I love the other Chipotle mustard sauce (soy, dairy, and gluten free).

This Buster’s location catered a party 18 people for us, including two people with gluten issues (one with celiac desease- me). The information that they provided when ordering was very clear. Most of their dishes are gluten-free. A couple of items were not. Their delivery staff was excellent. The food was excellent. I felt very safe eating this food and had no issues resulting from it.
