Very knowledgeable on celiac disease. Red napkin given to ensure allergy at the table was visible, I booked online and said I was gluten free. They automatically had a GF menu ready when we were seated. I overheard the waiter ask other tables straight away "any food allergies" when seating people, which I think is a good sign.
