We were extremely skeptical but needed food before our flight. We explained that my son was celiac and would need the cauliflower crust, a change of gloves, a pan to protect the pizza in the oven, fresh cheese and sauce from the back. We kept it simple with only cheese. We also asked them not to cut the pizza. The staff were concerned and wanted to try as they haven’t been able to offer a gluten free option before. It passed the Nima sensor as gluten free. My son and I were able to enjoy pizza night with the rest of our family. Wouldn’t have tried this without the Nima sensor, but it is possible. Pleasantly surprised!
