Not good for especially sensitive folks, but it's got a ton of options (including vegetarian ones) if you aren't as concerned with cross-contamination.

I'd never had a problem with getting things gluten free at the Ceviche in Sarasota, and I hadn't gotten sick in over a dozen visits to that location, or in a couple of visits to the one in St. Pete. A lot of the menu is naturally GF, so the staff don't have to deal with substitutions, which is always good.

But the luck ran out this August at our first visit to Tampa. I talked with our server about it when we first got there and we ordered dishes we'd had before, but I got sick before we'd paid the bill. I'm guessing that there was an issue with cross-contamination.

Were it not for the gluten issue, I would have given it 3-4 stars - the food was adequate, but a bit blah compared to the other locations. The patatas bravas were a bit bland and the papas fritas weren't crisp, but the tortilla espanola was fine. The building, however, is really amazing - definitely worth a visit for those who wouldn't have to deal with cross-contamination questions.
