They will wash their hands and change out their gloves before starting. For things like cheese or lettuce where someone could have touched a tortilla and then touched the cheese or lettuce, they grab it from storage so it has no contamination. Only one person touched your food the entire time and you watch it.
The only thing with gluten is a tortilla. Everything else is safe so tons of options!
