I went there yesterday and none of the employees even knew what gluten was when I tried to talk to them about it. The girl making my food wouldn't even listen to me and didn't change her gloves and there was cross-contamination all over the place. I will not go back!
Edit: I was contacted by the new manager who apologized for my experience and stated they will continue to do education for their employees and make sure that it is totally understood all the steps that need to be taken to prevent cross-contamination. The manager stated that they take this very seriously.
One of the best GF chains! Most locations (especially Airport Highway) are very knowledgeable about cross contamination. Everything is GF except the flour shell. They are good about changing gloves and spoons. Occasionally you will get a newer person and if you simply remind them, they know what to do.

Chipotle does not have a gluten free menu but instead has a list of gluten-containing ingredients to avoid. Cross-contamination is a concern, however, so let the person taking your order know that you are gluten free and if you need them to take the proper precautions.
From their website: "If you avoid gluten, don't eat our flour tortillas. If you are highly sensitive to gluten and would like us to change our gloves, just let us know at the start of your order. You should be aware items containing corn, including corn tortillas (chips, soft corn, and crispy corn tortillas) and corn salsa, may have a small amount of gluten from potentially co-mingling with gluten-containing grains in the field."
Price is ok and I can actually eat their chips! They have the best chips around!
Best GF fast food experience so far. They didn’t make me feel weird or like I took too much time. I told them I have a gluten allergy and the line stopped. They changed spoons for what I ordered, wiped down the counter, got out fresh cheese and lettuce, changed gloves, and one person took charge of my order seeing it through to the end of the line. I know there’s still a risk, but I’m thankful for all they did to help me eat with my family.

I was a little concerned when I read it had been two years since the last review, but I went and as soon as I told the server I had celiac, she immediately offered to wipe down the surfaces and change gloves. She did it so cheerfully also!

Lots of gluten free options, good choice for catering, and ability to sort through gluten free options by using their dietary filter online. There are good options available if you're dairy free/vegan as well!

While there’s obviously a chance of cross contamination, the workers here are very nice and accommodating. Everything except for the tortillas is gluten free. I always ask them to change their gloves and this past time a worker felt her glove touch the tortillas after changing them so she immediately changed them again! They never have a problem getting lettuce or cheese from the back which I appreciate! I have not had a reaction here yet and I am very sensitive!

I told the server I was gluten sensitive, and she immediately changed gloves and handled all my food herself.
