Have had the steak bites and prime rib and never had an issue.

We used to visit Clyde's a couple times a year pre-pandemic, but hadn't been back in awhile, so went with friends last Saturday. While we had amazing service and great cocktails/wine, sadly, many of our faves are no longer gluten-free that used to be. Their amazing horseradish/bleu cheese dressing is no longer gluten-free but they can do a regular salad with another dressing. Their au jus is not GF, and they usually warm the prime rib in the jus, but they were able to prep mine safely without that step. Also, the broccoli that comes with the prime rib is also not GF anymore, but they steamed mine instead. With all these modifications the kitchen would have to do, I offered to order something else so it would be less work and less chance for cross-contamination, but our server was insistent that it wasn't a problem and they'd be happy to do it. (He was fantastic throughout the meal, checking in frequently and bringing water, fresh horseradish, anything we needed.) No reaction afterward.
